I'm really glad to see that this subject took off. Not sure about Waldmeister being English as my bottle says it's made Germany and all the writing is German. Anyway, it does use the woodruff herb which I cook and make ales with but yeah, that is what gives it the flavour.
I bought some fennel syrup from a German mail order place and I look forward to making some moassel with it.
It's great over milk and ice as a drink or on ice cream.
