The "bbq" smell comes from the dark form of molasses they use. We associate a natural molasses smell with bbq sauce a lot in the states. A good molasses bbq sauce can be awesome but it doesn't really smoke well, especially when mixed with the flavors that are being replicated in shisha tobacco. Also the tobacco they use is strong, robust and might even be flue cured for some blends which will give a smokey flavor and quality to the smoke and the flavor.
I have only experienced this smell with one batch I got but just about every batch I have had has taken time and work to get smelling like it should.
It really is a matter of luck and conditions. Here in MA where the weather is in a constant state of fluctuation it is very hard to get right.
