Basically rule is that you smoke something similar to what the cafe serves. Usually, it's rude to tamp your coals when smoking moassel but acceptable to do so with jurak and tombac provided that you do so in the coal carrier they leave on the table. When you smoke moassel you brush a way the ash with the tongs or a little wire bush they give you.
