As for saying it right:
SHE-SHA, its not said with an accent or anything. Just say SHE followed by SHA.
And I know lebanese people and iraqi people that will call it shisha instead of arghileh, but hey, thats ok.
Shisha tobacco makes sense, and i think its called shisha now because the tobacco from shisha tobacco got cut off out of laziness.
