Well frankly I never got the coals on the moassel thing. When I see Arabs/Kurds/Persians or whatever smoke moassel they always use foil or screens. The only time I see anyone put the coals on the directly is with tombac. Basically the reson I adovocate re-moisturizing Zaghlouol/Salloum plain and such is that since the stocks we in the West can get have sat aroun for too long they tend be dried out. In the Middle East that sort of thing is always a good deal less dried out so you can basically just chuck it in the bowl without any extra work.
Anyway, give both my method and the coals on top method a try and see which one works better for.
