Humidity shock does mute the flavorings with the underlying molasses coming through (Kalutika, you were right on this). Which is why some people get the soy/bbq sauce flavor. This issue has been beat to death for sure, but the only thing I want to add is that people should be acclimating where they smoke (i.e. inside if they smoke inside, outside if they smoke outside).
