I think both your ideas are good.

I tried using a serrated knife to saw the coals in half, but its pretty time consuming and makes a huge mess.

I really like the pillar idea, but the pieces are generally to large to stand up without fear of complete coal disaster.

So, I decided to combine your two ideas:

I found a big, cleaver style knife. They I just chopped of a small piece (about the size of a coco nara). Because one side (or hopefully both) are flat, I can stand it up like a pillar. Cutting it with one large chop creates almost no mess and makes a clean break. I'll try them out in the next couple days and see how this new method works.
