I like hickory for chicken grilling, mesquite for burgers and steaks, pecan chips are great for smoking baby back ribs. cedar planks are good for grilling fish on. chips and planks arent really coals though just thought id throw those in for good measure.
in terms of hookah i love Akhla but they are hard to come by these days. not a huge fan of coconut coals as they ash weird and need a bit more up keep thru out the session.
CH quicklights, belgian nats are good too
