milk is different. They producers have to account for people who may leave it out for hours or forget the cap or other stupid things. Not only that but I have heard rule of thumb that milk is usually 'good' for up to a week past expiry date.

The expiration dates on food is actually the sell by date. They food is still plenty good and will still be fine and edible long after that date passes. Long enough for it to be consumed at an average rate. It's the last day that they can legally SELL it to a customer.
