The foil pattern an coal placement are all part of heat management so every person has a different preference. Depending on which bowl and tobacco you're using, certain patterns work better than others. I use the hole pattern you described when I use my Crown classic bowl but I place the 2-3 coals on the outer rim. If the person was using a modern/Egyptian bowl then I find that its better to poke holes over the entire bowl and rest the coals on the edge of the bowl. Like TwoApples said, if it smokes well and isn't harsh then its good to go.
