The procedure is: Cut a small piece of foil about 3/4 inch square. Place it on the center (small) hole, loosely(un-punched). load the tobacco in the circular impression. then cover the top of the phunnel bowl, with a standard piece of foil, just like a traditional bowl. Then poke your holes as usual.
When you draw on the hookah, the smoke will travel through the space between the small foil, and the center hole. The small foil serves to keep flakes of tobacco from getting drawn down the stem, and winding up in the vase.
