The Phunnel keeps the Juices of the tobacco in the bowl, instead of draining down your stem. The more heat is applied, the more viscous the liquid (whatever it may be) becomes. The tobacco, inside the phunnel, is saturated in it's own juices, which are being heated, therefore releasing much more flavorwhich is not being lost. This leads to bigger clouds (more glycerine stays in place), more flavor (glycerine is always there until it's sizzled away), longer sessions (you have flavor for longer.
