Tobacco goes into humidity shock and makes the tobacco taste horrible, ask any of your ciar smoking buddies. Tobacco needs to acclimate to the humidity that you are currently in so as not to go "sour" for a lack of a better term. Different types of tobacco go into varying degrees of humidity shock. As for how it relates to hookah tobacco, I know some people here on this board let every bowl "rest" at least 30 minutes prior to smoking it.
