One of the local hookah bars here uses these wood/metal foldable things that the hookahs sit in. Seems to work pretty good. Not sure if anyone sells anything like it though.

You could just get like a little wood foot rest/pedastool (sp) and cut a hole in the middle?

Someone I know cut a hole through his table that fits exactly the width of the stem. Possibly coincidentally, the table top is right where the stem starts, so it looks like theres no vase or downstem from the top.

Not useful for your portability needs... but I thought it was pretty amazing

I've seen that, it's neat.

On the other hand, I've seen like a wire basket formed to shape a hookah used.. It's hard to explain it. but basically it has like six legs, and has way less of a chance of being knocked over. the person even made hose rings, so you can wrap the hose on it.. It wouldn't be too hard to make, but you would need rubber stoppers so the brass / metal wouldn't scratch and or break the hookah.
