First off, pack a bit less in the bowl, you're almost to the top, no need to be that high.

Poke smaller holes, and use two coals directly on top of the bowl instead of four around the side. If its smoking out the top, you're burning the tobacco. Not good.

You're coughing too, which means you're probably tasting burning instead of flavor.

If you're inside you wont really need the wind cover. It produces a ton more heat. Wind covers are generally only a good idea if you're smoking in a windy area or if you're only using one or two coals on a much bigger bowl and want to create extra heat.

Lose the wind cover, two coals in the middle instead of four, smaller holes, little less tobacco in the bowl.

1. Holes are too big. Use a toothpick sized hole or smaller.
2. For a bowl like that, only 2-3 coals are necessary.
3. No need for a wind cover if there's no wind.
4. NEVER put hot coals on a plate/glass object. it will break.
5. Water should be half an inch above the stem.(i think you got that)
6. You over packed that bowl, sprinkle the shisha into the bowl, under the brim. Don't pack it in and don't put that much. Try under packing the bowl.

The juice on your gromet is there because you are not using a phunnel, your using a standard bowl. The flavor seeps down into the holes down to your stem and sometimes into your water.

Now, I say you clean the stem. pack your shisha lightely, tightly wrap the foil around, Smaller holes and 2-3 coals. No wind cover... and possibly buy a phunnel bowl.

I don't even use a Phunnel but it is very clear you have TOOO much tobacco in there. You are not supposed to cover the center hole with tobacco only fill the trough on the outside. Leave about 1/8 inch below the rim.

Holes are definitely TOO big. Try using smaller holes as been mentioned.

try to sprinkle the shisha in there, and like pualk said do it around the edges, and i usually use a tooth pick and poke all the way down to the center hole so theres clear airflow.

u know what ill make you a quick video on packing, i have a bowl like that.

Go make a bowl exactly like this :

Heat up two of your coals.

Use a toothpick to make holes about half the size of what you have there, feel free to poke about the same number, just smaller in size.

Pack a tad less tobacco in the bowl.

Place the two coals in the middle of the bowl, not on the rim.

Dont use a wind cover.

Report back after doing this.

ok doing it now how long should the coals be on the hookah before i smoke and when i sprinkle the tobacco it seems to get to the top very fast and slides to the middle should i move it with my hands or let it like that?

The coals dont need to sit on the bowl for more than 30 seconds to a minute before you can start getting smoke.

Yes the bowl will fill up fast, you dont need a ton of tobacco in there, thats a small bowl, perfect for a 30-45 minute session by yourself, you wont burn through tons of moassel.

Its alright if it falls towards the center, you really cant avoid it and as long as you dont overpack the bowl it wont clog the airway.

Yes juice on the grommet is normal if you're using a standard clay bowl. As the molasses / glycerin heat up they liquify to a point where it can drip down into the stem. Its not uncommon or a problem. Just clean your pipe when you're finished smoking.

If its a Phunnel as mentioned in your first post you should not have any juice on the grommet though. As Hookahwaffle mentioned you should only have the juice on the grommet if its a standard bowl.

looks good height but looks over packed, you may compensate by poking holes down to the bottom of the bowl...or from the bottom of the bowl, up.
