it all comes down to personal preference, do it both ways and see what you like. i poke 3 holes, give or take on my funnels.

I start with no holes, then add one or two if it seems like I need them (i.e., heat management is, for some reason, being fickle).

I usually don't, but I have been for the last few days after watching this:

I have been doing a circle pattern with no holes in the middle since I started smoking with a phunnel. This video gave me another technique to work on, and it obviously works fine (when done right), since the guy who invented the phunnel/tangiers uses it.

holy crap that is alot of holes and take a long time to pack. i too do the 2 rings of holes with no center
