from what i hear: true lambics are only made in a certain areas of Belgium because it has about 100 naturally occuring yeasts and bacterium in the air that make the lambic what it is. off topic, but thought id throw it in

it may be disputed- i dont know- i just want to be cool, like you guys

aragh is not Iraqi, its Iranian
it means 'sweat' in Persian

I only mention the thujone because that's where most of the controversy lies.

Keep your eyes open. There are about a dozen distilleries in N. America that will have an absinthe on the market in the coming months.
Currently there is:
St. George Spirits Absinthe Verte - San Francisco
Sirene Absinthe (I have a bottle on order but it's currently lost in the mail!) - Chicago
Taboo Absinthe - BC

Others are on the way along with European brands which are now for sale.

As soon as I replace my camera which got stolen recently, I'll post a pic of my stash.

last night had to put down a couple of glasses of arak with expired af DA, it did go together quite nicely

OK, I went to a shop run by some Turkomans in the city and what I got was Arak Al Rayan and Arak Haddad. I must say that I wa impressed by both although the former was really delightful. I had it with AF double apple and it was a really pleasent session and I think the first time I ever had anything but tea or coffee while smoking. A great, contemplative time with a rare treat.

Arak Rayan (sorry PI) is total crap, in Lebanon they use it to wash their hands after working on cars. (really PI that is not a personal shot at you , seriously) Haddad on the other hand is OK but I definately prefer the Lebanese arak, but that's my personal bias, well mpore than that, I do have alot of experience wih arak and do love it, and I will be the first to say something is junk when it is.
Hajo if you have any others in your local shop send me a pm of the name brands and I will recommend if I think worthy, thanks

This is how absinthe is tradtionally prepared.

ive seen a bunch of variations on the sugar and water thing (i think its mroe regional things), some being lighting the sugar like that and dropping in, others pouring the alcohol over the sugar others with the water.

i just wanted to revive this thread for a bit. I know many of you have expressed an interest in arak, but i think arak needs to be drank with the right type of food, mainly lebanese food, however, most member here are single younger guys that smoke at home and can't just whip up a good lebanese meal whenever they want, unless of course it's aburonin were talking about. anyways, some simple food, well more like snacks. to enjoy hookah and arak are easy to make, and healthy. the last two nights I have been to full to eat but i'm still going to smoke and drink, right? so, i went back to my bar days in lebanon to where when you order a drink they automatically give you a small plae of salted peanuts and thinly sliced carrots with lemon and salt. there you go, healty, light (kind of) and easy to make, also, you could do the same with cucumbers, just slice a carrot or cucumber into quarters, add a ton of lemon and salt and some peanuts on the side, this iwll make you arak and hookah so much more enjoyable. i've done this the last 2 nights about an hour after dinner. have fun...

your absolutely right! I always suggest that people explore mediteranean food as part of a healthy diet. The emphasis on high protein lean meats, olive oils, nuts, and beans is not only healthy, but very versatile. There are a million things you can do with the wide range of choices offered in this style of cooking.
fingerfoods are great while smoking also. I like some grape leaves, pickled mango, or just some pita w/hummus and olive oil.

actually thats an arabic word adopted into persian.

as for eating it with the right food, yeah, its good w/ your typical levantine breakfast/dinner

john, you should sell some za'tar and some 'ash'awam, the closest thing i can get to the cheese is pecorino, but its not as good, and as for za'tar im stuck in el paso, i cant get my hands on good za'tar.
